The Las Vegas strip never sleeps, there is no way to come to Las Vegas and not come across slot machines, they are even at the airport. Even to get from the street to your hotel room you will likely have to pass thru part of a casino to get there, therefore children are often allowed to pass thru the casino but cannot stay and watch you play. In the MGM grand for instance on one side of the casino is a glass encased area with lions in it that children can also enjoy seeing.
Entrances to shows are usually off to one side of a casino.

After dark the streets can become very busy full of people, and increased volume in the casino’s.
A lot may come for the casino’s but there is enough to see in Las Vegas that could keep you busy for a week or two without ever touching a slot machine. There are spectacular shows that may not be available anywhere else, there is even lots to see for those on a budget. Most of the hotels on the strip have attractions in and outside of the hotel, so you need the time to browse the entire strip, all hotels are accessible regardless if you are staying in that hotel or not.
Las Vegas blvd is a busy street, so use the multiple overpass walkways to get across the street. You will come across some homeless that can sometimes be found on the walkway overpasses.
If you are the type to try your luck at the casino’s I would recommend that you either make it the only stop on your trip or the last stop of a multiple location vacation, that way you will not short change yourself if planning further stops afterwards.
Getting around on the strip, You can walk it, take the mono rail, which runs from the MGM Grand to Sahara which has a fee to go on it, cheaper if you buy a 3 day unlimited ticket ($ 28 for 3 days when I was there), there was on the opposite side of the street a tram that took you down to the other end at Mandalay Bay & Luxor hotels and that one was free.
You will want to browse the strip both in the daytime and after dark.
Accessibility:
I would say that the Las Vegas strip is as accessibility goes are one of the best you are likely ever going to get, the mono rail and tram systems where fully accessible, there can be special gates / entrances for the mono rail terminal that is wider than the others the allow a wheelchair to pass, getting out sometimes has a special exit that is actually on the entrance side, with the mono rail you have to get very close to the exit gate and it will open but you have to be close to touching for it to open.
Plenty of elevators to get to boarding platforms and to overpasses. For every set of stairs there is way by ramp or elevator
In the evening after the sun goes down the streets gets even more busy, so you have to compete with a lot of people traffic, just resist the huge to put your mobility scooter or wheelchair in full reverse after the 3rd person has bumped into you from behind.
